Shiitake Mushroom

For hundreds of years, shiitake mushrooms have been a popular food source in Asia. They’re the second most popular and the third most widely cultivated edible mushroom in the world. Today, shiitakes can be found in most grocery stores because of their meaty and versatile flavor, but did you know that they’re packed with B vitamins and have the power to fight cancer cells, cardiovascular disease and infections? That’s just a few of shiitake mushroom nutrition benefits. Why are these small fungi so powerful? It’s because shiitake mushrooms have antiviral, antibacterial and antifungal properties. They also help to control blood sugar levels and reduce inflammation within the body. That’s right — all of these health benefits come from eating a mushroom. And there are a ton of easy ways to incorporate shiitake mushrooms into your diet.

Oyster Mushroom

Oyster mushrooms may sound more like something you'd find in the ocean than on land. Yet this edible fungus can be beneficial to the body and breaks down toxic chemicals. Oysters are one of the most versatile mushrooms. They are easy to cultivate and common all over the world. They are also very beautiful, coming in a broad spectrum of colors. Let's take a look at the different uses of this interesting mushroom. I'll start with some simple oyster facts and move on to their role in mycorestoration. I'll end with their human uses, both medicinal and culinary. The oyster mushroom is a saprotroph, meaning it feeds on dead and decaying matter (mainly wood). They are found on hardwoods throughout the world in the spring and fall. The caps usually range between 5 to 25 cm (2 to 10 inches) and are shaped like a fan or an oyster. The caps are rolled into a convex shape when young and will flatten out and turn up as the mushroom ages. They can be white, yellow, brown, tan, and even pink! They have a unique scent that is often described as sweet like anise or licorice (liquorice). The latin name Pleurotus ostreatus means "sideways oyster", referring to the oyster-like shape of the mushroom. There are a few closely related species that can be hard to distinguish from oysters. Thus it's helpful to bring someone knowledgeable when searching for them in the woods. The mycelia will kill and eat nematodes (small roundworms) and bacteria, making them one of the few carnivorous mushrooms.

Pom Pom

The Pom Pom mushroom is a delicate white sphere with soft spines and no stem. It has a mild, sweet taste and pleasant texture that have been compared to lobster or very tender veal. Its appearance has earned it many interesting common names including Monkey's Head, Lion's Mane, Bear's Head, Old Man's Beard, and Satyr's Beard. Among its other medicinal benefits, pom pom is best known for its traditional use in treating ailments of the stomach and digestive tract, as well as nervous system disorders. It has a mild, sweet taste and pleasant texture that have been compared to lobster or very tender veal.

The fruiting body is distinguished by its noticeably ear-like shape and brown colouration; it grows upon wood, especially elder.
